| 内容記述 | 本稿では、栄養教諭が考えている食に関する指導の現状と課題について、勤務等の実態や経験年数に関連させて3つの研究課題を設定し、アンケート調査の結果を検証した。研究対象は、2019年度に北海 道の小・中学校に勤務する栄養教諭 94名であり、郵送法により質問紙調査に回答した58名が調査対象となった（回答率は14.7%）。調査時期は2019年11・12月であった。アンケート調査票は、大項目2項目、小項目9項目からなり、記述を中心にして該当事項の選択も併用した。 研究方法は、アンケート調査結果について、クロス集計を行うとともに、課題とその理由のキーワードをカテゴリーに分類して統計解析を行った。1つ目の課題である「提供給食数が多い栄養教諭ほど食に関する指導回数は減る傾向にあるか。」であるが、給食提供数が多い栄養教諭は、必ずしも食に関する指導回数が少ないとは言えないことが分かった。2つ目の課題である「勤務年数が多い栄養教諭ほど食に関する指導回数は増える傾向にあるか。」であるが、「2～5年」の栄養教諭が、食に関する指導の合 計回数で最も多かった。また、給食前後の5～10分指導に限定すると、栄養教諭としての勤務年数が多 いほど指導回数が増加する傾向が見られた。3つ目の課題である「食に関する指導をする上での課題は、 給食業務が多忙なことが主な原因であるか」であるが、栄養教諭は、多様な業務を背景とした時間不足が主たる要因となって、指導における内容や技術・方法についての課題が最も大きいと考えていることが分かった。 |

| 内容記述 | This paper presents the results of a survey comprising of three research questions seeking to determine the ideas and opinions of nutrition teachers about the current status and issues in food and nutrition education, based on their actual working conditions and work experience. This research targeted 394 nutrition teachers employed at elementary or middle schools in Hokkaido, Japan, of whom 58 (response rate: 14.7%) replied to a paper-based survey administered by mail. The survey was conducted from November to December, 2019. The questionnaire featured two main topics and nine sub-topics and included both written response and multiple-choice questions. A cross-tabulation analysis of the survey results was performed, following which each topic and related keywords were divided into different categories for a statistical analysis to be performed. The response to the first question － “Is there a tendency among nutrition teachers who prepare more school meals to impart food and nutrition education a fewer number of times?” － the results of the survey did not suggesto so. Regarding the second question － “Is there a tendency among nutrition teachers with more work experience to impart food and nutrition education a greater number of times?” － nutrition teachers who reported having two to five years of work experience were found to have imparted food and nutrition education the most number of times. In addition, the results of the survey showed a tendency among nutrition teachers with more work experience to impart such education more frequently specifically during the 5 to 10 minute period before and after school meals. In response to the third question － “Is the large amount of time consumed by food preparation the main cause of issues in food and nutrition education?” － the results of the survey revealed that nutrition teachers believed that the main cause of issues relating to the contents, techniques, and methods used in nutrition education was the variety of other duties they had to perform. |
