| 内容記述 | 本研究では、有床診療所における給食経営管理の現状、管理栄養士・栄養士の配置状況および雇用形態について把握することを目的として、質問紙調査を実施した。北海道内すべての有床診療所485施設に自己記入方式の質問紙を郵送し、郵便返信にて回収し152施設より回答が得られた（有効回収率31.0％）。給食経営管理の献立作成を受託給食会社が行っている施設は半数以上を占め、地域別では、都市部（石狩）において、受託給食会社の割合が高かった。管理栄養士・栄養士のどちらとも配置していない施設が半数近くあり、献立作成を調理員が行う施設もみられた。有床診療所の栄養管理の方法は、施設ごとに多様であることが示唆される。今後、有床診療所における栄養管理の方法を検討するために、さらなる調査の必要性がある。 | |||||||||||||||||||||||||

| 内容記述 | The aim of this study was to assess the current dietitian staffing levels and food service management practices of medical clinics with beds, using a questionnaire survey. A self-administered questionnaire regarding the current food service management and nutrition management practices was distributed via post to all of Hokkaido Prefecture's 485 medical clinics with beds, and their responses were gathered (valid response rate, 31.0％). Almost half of the clinics overall, and a higher proportion in urban areas (i.e., Ishikari) had contracted with food service companies. Nearly half of the facilities without such contracts employed either a nutritionist or a registered dietitian or both. In some facilities a member of the cooking staff was also involved in menu planning. Our findings indicate that the nutrition management practices of medical clinics with beds vary among clinics, and differ between urban and rural clinics. Additional research is needed to clarify unresolved issues in the area of nutrition management in medical clinics with beds. | |||||||||||||||||||||||||
